So last night, my mom and I decided to make this salad which was SUPER easy to make and it tasted SO good. Healthy food does NOT have to be complicated; we used a store brought brand of dressing and a box of greens. It didn’t take very long at all, and it was definitely worth it. For this recipe we used an entire box of greens to split between the two of us and my dad, so the measurements for this recipe are slightly larger than if you made it on your own, but it’s also easy to save the ingredients for another time or other meal prep!

Grilled Chicken Caprese Salad
Prep time: 20 minutes
Cook time: 25-30 minutes
Servings: 3 (for full salad)
1 box of organic greens
Balsamic Vinaigrette dressing
2 boneless skinless chicken breasts
2 roma tomatoes
1/4 cup mozzarella balls
Salt & Pepper
Optional: basil
- Take the two chicken breasts and season them with salt and pepper to taste. Add 1/4 cup of the balsamic dressing and let the chicken marinate for 15-20 minutes
- After the chicken has been marinated, grill the chicken for 20 minutes
- Chop the tomatoes into quarter pieces, and combine dressing, cheese, and tomatoes
- Once the chicken is grilled, serve it with the salad!
