Some days I’m not hungry enough for breakfast, or I’ll drink more water or even coffee to replace breakfast. The other day I decided to make what I decided to call “apple cookies” because they kind of looked like cookies to me!
This was the final product and it was so easy to whip up! I added peanut butter for protein, granola, and blueberries. You can add other toppings as well! I loved eating these because it wasn’t a heavy breakfast, but it filled me up and kept me full. Apples are high in fiber and with the protein from peanut butter kept me full and energized. I would definitely make these again and they taste so good, if you’re a big apples and peanut butter fan, you’ll love these!
Here’s the ingredients I used!
- 1 Apple (cored, cut into 4 pieces) any apple you like is good to use! I used gala apples for these
- 3 tbsp peanut butter
- 4 pinches of granola (I used the vanilla almond by the bear naked brand; any granola works!)
- 4 blueberries to each apple
Other toppings you can use!
- A drizzle of honey
- Mini dark chocolate chips
- Dried cranberries
- Halved grapes
- Coconut flakes
You can enjoy these “apple cookies” as a snack or breakfast! Either way they’re so easy to make and fun to eat!
